Enjoy the combination of the "specially made soba noodles" made by Handa hand-pulled somen "Shirataki Seimen," the blended sauce (kaeshi) based on the premium soy sauce from Miyoshi City's "Tenshin Shoyu," and the superb, wholesome soup, which is made without any animal products and is extracted only from "dried foods + herbs + alpha" such as dried sardines and bonito flakes.

Broad soba rice crackers

We made our own rice crackers using whitebait caught locally in Komatsushima and 100% rice flour from Komatsushima. They are seasoned with the finest soup from "Soba Noodles" and its "dashi stock." You can enjoy the crispy texture, or dip them in the soup to enjoy the soft texture!
★These Shirasu Senbei rice crackers are made by users of "Ponpoko", a Type A business that supports continued employment in Komatsushima City. We also ask them to sort custom-made Handa somen noodles and select dashi stock for furikake. Although it is a very small contribution, we hope that this "Sora Soba" can play a part in supporting people with disabilities.

Pork Belly Char Siu / Because the soup is so animal-free, the char siu is seasoned with a wild, animal-like flavor. Just before serving, it is roasted over a burner to add a fragrant flavor!

Soft-boiled egg/udon noodles: Enjoy the exquisite dipping sauce from Tanokyu for a whole day!

Extra thick bamboo shoots tossed with black pepper / To prevent the fermented smell of the bamboo shoots from interfering with the exquisite soup, we added freshly ground black pepper just before serving!

Comes with special "Soba furikake"!

The ingredients of the superb soup of "Sora Soba" are a trade secret, but the domestic soup stock bones, such as kelp from Hokkaido, extra thick dried bonito flakes, dried bonito flakes, dried sardines, and dried mackerel (oh! I said it!!), are too good to throw away, so we made them into furikake. Putting aside the silly things like SDGs, you can add as much as you like, so please add as much as you like!

We want everyone to enjoy it, from children to the elderly...

  • No chemical seasonings or colorings are used in the soup .

  • No animal-based ingredients in the soup

  • No animal-derived flavoring oils (lard or chicken oil) are used.

  • The sugar in the soup is oligosaccharides, which do not raise blood sugar levels.

The users of the Type A Continuing Employment Support Facility "Ponpoko" are baking the Shirasu rice crackers, and we also ask them to sort the specially ordered Handa somen noodles and select the broth scraps for furikake. We hope that this "Sora Soba" can play a part in supporting people with disabilities, even if it is just a very small contribution.

*Agricultural welfare collaboration (collaboration between agriculture and welfare) refers to the promotion of disabled people's participation in the agricultural sector.

This is an initiative to realize social participation with confidence and a sense of purpose through these efforts. We coined the word "Menfuku Collaboration" to represent this initiative , incorporating the word "noodles" in "sora soba."

Homemade slightly thin noodles "Tanokyu"

TA NO KYU

"Tano Kyu" was founded by the first-generation owner who left his office job after training at udon restaurants in Tokushima and Kagawa. Initially, we only offered various udon dishes, chirashi sushi, and inari sushi.

Over forty years later, our menu has expanded significantly. We now offer udon and donburi where you can choose the number of shrimp tempura you'd like, as well as homemade fried chicken donburi and set meals. We're always adding new items to meet our customers' needs.

Even with the trends of handmade udon and Sanuki udon booms, and self-service udon becoming the norm, we stubbornly stick to our traditional style. Our broth and noodles still follow the original recipes from our founder.
